This almost savoury, sugar free porridge is instantly warming, grounding and satiating. The subtle sweetness comes from the coconut milk and the fruit, and there’s no blood sugar spike for breakfast. With plenty of good fats and protein there’s some hormone balance too.
Ingredients
1/2 cup quinoa flakes
1/2 cup full fat coconut milk
1/2 cup unsweetened almond milk
1/2 tsp grated fresh ginger
Pinch of saffron (crumbled in)
1/2 tsp @suryanutrition ground turmeric
1/2 tsp cinnamon
Himalayan pink salt to taste
Method
Simmer for 5 minutes, stirring, add a little filtered water if you need to to loosen it (I usually do)
Stir in 1 tbs ground sesame seeds (or tahini), and 1/2-1 tsp raw honey off the heat
Put in a bowl, top with something colourful like cherries or pomegranate arils, and chopped fruit like pear, plum, figs (what’s in season?), a tbs toasted sunflower seeds, and a small handful of toasted walnuts.
