An almost savoury, autumnal fruit salad. Full of good fats, protein, plenty of vitamins and antioxidants, and no added sugars. Serves 1.
Ingredients
A handful of raspberries
A handful of blackberries
2 tbs pomegranate seeds
1 soft, ripe black fig
Half a hass avocado
A good handful of broken walnuts, sunflower and pumpkin seeds
1 tbs toasted coconut flakes
1 tsp goji berries
1 tbs freshly ground flax seeds
1 tsp of bee pollen
Method
Put the berries and pomegranate seeds in a wide bowl. Chop the fig and avocado, add to the berries with the walnuts and seeds and mix gently. Top with coconut flakes, goji berries, ground flax and bee pollen. Eat.
N.B. Grinding the flax seeds is really important otherwise they tend to go straight through you and you won’t get the benefits! Just make sure you grind what you need freshly each time, or grind up a batch and freeze it. Flax seeds oxidise rapidly when exposed to light and air, and you’ll be getting a tablespoon of free radicals instead….The extremely low freezing point of flax seeds means you can store them without change in your freezer.
